From Florence, with a past in the world of fashion and as a food critic, in 2006 he decided that the future of street food would be quality and that the sandwich would become the tool for making great ingredients and great producers known.
His idea was successful and in a very short time the Florentine laboratory in Via de' Georgofili became a pilgrimage destination for gourmets from all over Italy and beyond.
