BETTINA
Originally from the East Coast, Brendan spent four years working in the world of renewable energy consulting before transitioning to the life of a bread baker. Following a formative stint at Orchard Hill Breadworks in southwest New Hampshire, he moved to New York where he ran the bread program at Roberta's in Brooklyn. After moving to the Santa Ynez Valley in 2014 and starting a mobile wood fired catering business, Brendan and his wife, Rachel Greenspan, opened their first restaurant Bettina in late 2018. Located at the Montecito Country Mart in Santa Barbara, California, Bettina specializes in wood fired, naturally leavened pizza and simple market drive Italian dishes. In addition to being featured in numerous publications, Bettina received a 'Bib Gourmand' Michelin designation in 2021, and was recently featured on the Food Network's 'Diners, Drive-ins, and Dives.' Brendan and Rachel's new pizza spot in Carpinteria, Tina's, is set to open early 2025!
