David Castro Hussong
FAUNA
David Castro Hussong is a Mexican chef who began his training at the age of 13. A graduate of "The French Culinary Institute," he has worked at renowned restaurants such as Noma (Copenhagen), Blue Hill at Stone Barns, Eleven Madison Park (NYC), and Cala (San Francisco).
In 2018, he opened Fauna Restaurant (Valle de Guadalupe) as the executive chef. In 2020, he opened Bruma Wine Garden, and by 2022, he inaugurated El Tigre and El Tigrillo (Mexico City). In 2023, he launched his latest project and first in Ensenada, La Morocha.
Under Castro Hussong's direction, Fauna has been recognized on the famous and acclaimed list of 50 Best Restaurants Latam with the One to Watch award (2020), High New Entry (2022), and Best Restaurant in Mexico (2023). Additionally, in 2023, it was included for the first time in the World's 50 Best Restaurants list.
Among other accolades, Fauna was awarded Sustainable Restaurant by Food and Travel in 2022. It has been featured in Culinaria Mexicana since 2019, winning the Best Restaurant in the Country award in 2020. In Mex Best, it earned the titles of Best Hotel Restaurant in 2018 and Best Restaurant in the Country in 2020.
