Fabian Daviaux

CELLAR MASTER, CHAMPAGNE CHAVOST

Fabian Daviaux is the great-grandson of one of the founders of the Chavot-Courcourt Cooperative, established in 1946. Since its inception, his family has been cooperative winegrowers, and he currently serves as the Cellar Master.

The Cooperative oversees the pressing and vinification of 50 hectares of vineyards belonging to around twenty families, all guided by ten closely-knit administrators committed to promoting the unique Champagnes of their Mono Cru, Mono Terroir.

In 2016, to mark its 70th anniversary, the Cooperative launched its own brand, "Champagne Chavost," named after the medieval village that once surrounded the local church. Prior to this, the Cooperative had long produced Champagne exclusively for its winegrowers.

After studying oenology in Reims, Fabian sought to expand his knowledge by exploring viticulture and oenology across various regions. His winemaking journey took him to Languedoc-Roussillon, Saint-Estèphe, South Africa (twice), California, and New Zealand, before refining his Champagne expertise at a prestigious Maison Champenoise in Aÿ.

In April 2019, Fabian returned to his family's roots and became the Cellar Master of the family Cooperative. His goal is to further enhance the promotion of their terroir, their Grands Vins de Champagnes, and their deep-rooted expertise.
