Nicolas Rossignol, born in 1974, represents the fifth generation of a line of winegrowers established in Volnay. He has been making wine since 1994 within the Domaine Rossignol-Jeanniard, thus perpetuating the family tradition. After a thorough technical training at the Beaune wine school, Nicolas put his knowledge into practice during various internships, notably at Domaine Joseph Voillot in Volnay, at Domaine Louis Latour in Ardèche as well as at Domaine du Vieux Télégraphe in Châteauneuf-du-Papa.

Eager to master other cultivation and maturation techniques, he left to vinify in South Africa at Domaine Boschendal in 1995 and then to Bordeaux at Château La Cardonne managed by Château Lafite Rothschild.

In 1997, he created his own three-hectare estate spread over the municipalities of Volnay, Pommard, Beaune, Aloxe-Corton and Pernand-Vergelesses.

Since 1998, the total surface area of the Rossignol-Jeanniard and Nicolas Rossignol estates covers almost 16 hectares.

In 2005, two and a half additional hectares increased the surface area of the estate with new appellations such as Savigny-les-Beaune 1ers Crus "Aux Fourneaux" and 1er Cru "Les Lavières", as well as a plot of Beaune 1er Cru "Clos du Roy", from the Robert Ampeau estate in Meursault.

It was in 2011 that the Rossignol-Jeanniard and Nicolas Rossignol estates merged. They adopted the “Domaine Nicolas Rossignol” label with nearly 30 different appellations. In order to constantly improve the quality of his production, Nicolas Rossignol moved to the Benjamin Leroux estate in Beaune.

In 2014, one and a half hectares of Pommard and Pommard Premier Cru will further enrich the Domaine's range.

In 2016, the Domaine Nicolas Rossignol, which now extends over twenty hectares, was equipped with a state-of-the-art winery built in Beaune, in the desire to produce ever more qualitative wines.

In 2022, the estate started a new experience in Beaujolais , with 3.5 Ha on the crus  BROUILLY , MORGON , CÔTE DE BROUILLY , MOULIN A VENT .

2025 The project is to involve to the production of white wines like Meursault , Meursault 1 er cru , Montagny 1 er cru , Bourgogne Chardonnay , Bourgogne Aligoté .
